Recipe(tried): Lettuce Wraps inspired by Chili's

I haven't been to a Joey Tomato's, but this recipe was created by me after a trip to Chili's. I love their Oriental Chicken Wraps -- and they're low carb!
Oriental Lettuce Wraps
Created by Sally W. Eilersen, inspired by Chili's Restaurant
1 pkg. Good Seasons Oriental Sesame dressing mix, made according to "less oil" instructions with: (1.5 carbs and 80 calories per Tbsp.)
1/4 cup vinegar
3 Tbsp. plus 1/4 cup water
1/4 cup oil
6 oz. chicken breast
1 or 2 onion slices, quartered
1 Tbsp. sliced almond
2 Tbsp. prepared salad dressing, divided
Butter (also known as Boston) leaf lettuce
Make dressing according to the "prepare with less oil" instructions.
Slice chicken breast into strips. Saute onion and chicken in 1 Tbsp. salad dressing. When chicken is almost done, add almonds. Saute.
To serve: Place 2-3 strips of chicken, with onions and almonds, in lettuce leaf. Sprinkle with additional salad dressing or peanut sauce. Wrap. Or use sauces as dips for wrapped chicken.
Servings: 1
Calories: 320, Carbs: 5 (based on using 2 Tbsp. salad dressing)
You can use green or red leaf lettuce, if you can't find butter lettuce, but butter has a milder taste that fits this recipe better.
Peanut Sauce
1 Tbsp. creamy peanut butter
1 tsp. Soy sauce
1 tsp. Mild oil (sesame, soy, safflower )
1 tsp. Mild vinegar (white or rice)
1/4 tsp. Ginger
1 pkg. artificial sweetener
2 to 4 tsp. Water or chicken broth
Mix all ingredients in a small bowl with a wire whisk until smooth. Add water until desired consistency is reached.
Makes 2-4 servings.
Calories: 135, Carbs: 4 (for the entire recipe)
