Here's a recipe for a 'favorite' from Luby's.
Luby's Squah Corn Casserole
8 medium--size zucchini, cut into 1-inch chunks
1 (10-ounce) can cream style corn
1 (10 3/4--ounce) can condensed cream of mushroom soup
1/2 cup diced white onion
1/3 cup each diced: green bell peppers and celery
2 tablespoons diced red peppers or pimentos, drained
1/3 cup bacon bits
1/4 cup chopped jalapenos
Salt and ground black pepper, to taste
1 to 2 cups crumbled cooked corn bread
Shredded American cheese for garnish
Drop zucchini into a small amount of boiling water in a saucepan; simmer 5 minutes to soften; drain well. In a large bowl, combine corn, undiluted soup, onion, bell pepper, celery, red pepper, bacon, jalapenos, salt and pepper. Add crumbled corn bread. Mixturre should have the consistency of dressing. Mix well.
Pour mixture into a baking dish and bake, covered, at 350 degrees 25 to 30 minutes. Remove cover and sprinkle with cheese; return to oven until cheese is melted. Makes 8 to 12 servings.
