Recipe(tried): Luncheon for Special Friends

I had a luncheon for 4 friends --no reason, I just enjoy doing it. It really turned out to be fun and yummy. I used a clay pot filled with silk geraniums for a centerpiece. I tied some raffia around the pot. The table cloth was a bright yellow and the napkins were also tied with raffia. I baked poppyseed bread in small clay pots so everyone had their own loaf. I have some that are lined in pottery especially for baking, and I also used some regular small clay pots (carefully washed) that I lined with foil, sprayed and baked right in them. When they were done I took the bread out, removed the foil, put some plastic wrap in the clay pot and put the bread back in. It was served in the pots arranged in a basket. The menu was Crepes Con Queso, Green Salad with Glazed Almonds and Orange Vinaigrette, Poppyseed Bread, and Peach Melba Meringues. It turned out to be one of the prettiest and tastiest menus I've found. I'm sending along the Salad recipe, but if anyone is interested, I have the others too.

Green Salad

8 c. mixed salad greens
1 (11 oz.) can mandarin oranges, drained
1 green onion, diced
glazed almonds
orange vinaigrette

Combine the first 3 ingredients. Drizzle with the vinaigrette and toss gently. Sprinkle with the glazed almonds.

Orange Vinaigrette

1/3 olive oil
2 Tbs. red wine vinegar
1/2 tsp. grated orange rind
1-1/2 tsp. fresh orange juice
1/4 tsp. poppyseeds
1/4 to 1/2 tsp. salt
1/8 tsp. pepper

Combine all ingredients in a jar; cover tightly, and shake vigorously.

Glazed Almonds

1 egg white
1/4 c. sugar
1 c. sliced almonds
2 Tbs. butter, melted

Beat egg white til foamy; add sugar and beat til stiff peaks form. Fold in almonds.

Combine butter and almonds in a pyrex baking dish; stir to coat. Bake at 325 for 20 min., stirring every 5 minutes. Cool completely.

This may seem like a bit of trouble, but then, arent' friends worth it??

I found these recipes in Southern Living 1996 Annual Recipes, so if you have access to it, you can see some great color pictures of some of them.
