Recipe: Lutefisk

I live in a VERY Norwegian community. I personally can't stand lutefisk (I'm German!), but here is a recipe found in my town's "A Tast of Norway" cookbook:
Lutefisk
2-3 lb. lutefisk or use pkg. fish & cook according to directions
2 tsp. salt

Sauce:
3 T. butter 2-1/2 c. mile
3 T. flour salt & pepper

In a pan of boiling water, add the fish and the salt. After it comes to boil again, boil 3 minutes, covered. Remove from heat and drain. Let cool. Remove bones; skin and break into pieces. FOr the sauce, melt the butter inthe cooking pan. Stir in the flour and then add the milk. Cook until sauce is thick. The sauce needs to be thick as the fish tends to thin it. Serve over mashed potatoes.

I guess the secret is in the boiling...you don't want to overcook it or it will turn out like fish jello! Yuk!
