Recipe: Magnifico Meatballs (Meyer's Rum recipe)

MAGNIFICO MEATBALLS

1 1/2 pounds ground chuck
1/3 cup and 1/2 cup Myers's Rum, divided use
1 teaspoon salt
1/2 teaspoon chili powder
1 small, finely minced onion
1 tablespoon oil
1/2 cup sweet pickle relish
1/4 cup catsup
1/2 cup beef broth

In bowl, break up ground chuck with fork. Add 1/3 cup Myers's Rum, salt, chili powder and onion. Toss together, then form into 1 inch balls.

Heat oil in skillet, add meatballs, brown about 5 minutes, on all sides. Drain off any excess fat.

In bowl, combine relish, catsup, beef broth, and remaining 1/2 cup Myers's Rum. Add sauce to skillet; heat until bubbling, serve with picks.
