Recipe: Better-Than-French-Fries Potatoes (Gloria Pitzer)

Side Dishes - Potatoes
BETTER-THAN-FRENCH-FRIES POTATOES

Potatoes, baked and cooled
Oil
Margarine (not butter, it burns)
Salt (to taste)
Catsup or vinegar (for serving)

Slice cooled potatoes lengthwise, unpeeled. Cut each half in half again lengthwise. taste.

Heat enough oil to cover bottom of skillet 1/4-inch deep. For every 1/2 cup of oil used, add 2 tablespoons margarine.

Making sure oil mixture is hot, add potatoes, browning cut sides only and turning until browned and crispy. Each strip takes about 5 minutes brown. Drain on paper towels. Salt to taste.

Serve with catsup or sprinkle with vinegar.
