Recipe(tried): Make Ahead Pancake Mix

Here's a make ahead pancake dry mix recipe that my mother uses all the time. She even gives it as gifts in baskets with a recipe card, syrup, etc. The following recipe is for one batch. She actually makes a much larger batch to keep on hand and then measures one cup at a time for use depending on the quantity needed.

MOM'S MAKE AHEAD PANCAKE MIX


2/3 Cup all-purpose flour
1/3 Cup wheat flour
2 tsp baking powder
2 TB sugar
1/2 tsp salt

Mix all together and store in airtight container.

If you are making a larger batch of this the following is the recipe for making the pancakes:

Take one cup of prepared mix, add 1 egg and 1/4 - 1/2 cup of milk. Mix until blended and the batter is the right consistency. Cook as you would any old pancakes.

NOTE: If you would like this a little richer you can add 2 TB of melted butter to the batter.
