LIGHT AND FRUITY PIE
1 package (4 serving size) Jell-O brand gelatin or sugar free Jell-O brand gelatin, any flavor
2/3 cup boiling water
2 cups ice cubes
1 (8 oz.) container Cool Whip whipped topping, thawed
Fresh or canned fruit*
1 prepared (8-or 9-inch) graham cracker crust
Dissolve gelatin completely in boiling water. Add ice cubes and stir until gelatin is thickened; remove any unmelted ice.
Using wire whip, blend in whipped topping; whip until smooth.
Fold in fruit; chill, if necessary, until mixture will mound. Spoon into pie crust. Chill 2 hours.
*Suggested fruits:
- 1 cup diced strawberries, orange sections, banana or fresh peaches
- 1 (8/4 oz.) can apricots, sliced peaches or pear halves, drained and diced
