Recipe: Make Your Own Pasta

MAKE YOUR OWN PASTA

Serves 4.
Ingredients
6 ozs (one-and-a-half cups) Plain Flour
3 oz Fine Semolina
Half teaspoon of Salt
3 x 50g eggs
2 tablespoons of oil
1 tablespoon of water

Mix flour, semolina and salt together on a smooth surface. Make a well in the centre and
add the eggs, oil and water. Mix and knead for at least ten minutes.

This dough should be smooth, non-sticky and elastic. Cover and allow to rest for 20-30
minutes.
Roll out half the dough at a time on a floured surface as thinly as possible, leave to dry for
15 minutes, sprinkle with flour and fold 3 or 4 times, then cut into strips the required
thickness. Shake the strands loose and boil in lightly salted water. Drain and serve
immediately with your favourite sauce.
