Recipe: Mandarin Salad Mold (Knox Gelatine) (blender)

MANDARIN SALAD MOLD

2 envelopes Knox Unflavored Gelatine
1/2 cup orange juice, chilled
2 cans (11 oz. each) mandarin oranges, drained (reserve 3/4 cup syrup)
1/4 cup lemon juice
1/2 cup ginger ale, chilled
cottage cheese (optional, for serving)
lettuce (optional, for serving)

In Osterizer blender container, sprinkle Knox Unflavored Gelatine over orange juice; let stand 3 to 4 minutes.

Add reserved syrup, heated to boiling; cover and process at STIR (LO) until gelatine dissolves, about 2 minutes.

Add oranges and lemon juice; cover and process at LIQUEFY (HI) until oranges are pureed, about 20 seconds. Slowly stir in ginger ale.

Pour into 4. cup mold or bowl and chill until firm.

Serve, if desired, with cottage cheese on a bed of lettuce.

Makes about 6 servings
