FRIED EGG NOODLES
2 tablespoons cooking oil
2 eggs, beaten
8 ounces Chinese egg noodles
1 clove garlic, peeled and crushed
2 tablespoons minced garlic
1 onion, peeled and minced
2 stalks celery
1 tablespoon soy sauce
2 tablespoons sherry
7 green onions (6-8), sliced lengthwise
Heat 1 tablespoon oil in skillet and pour in beaten eggs. Allow eggs to spread out to make a large flat omelet. When it is cooked through, remove and cut into strips. Keep warm.
Cook noodles in salted boiling water for 5 minutes or as directed on package. Drain and set aside.
Meanwhile, saute garlic, ginger, onion, and celery in remaining oil 5-8 minutes, stirring constantly, until tender.
Add soy sauce, sherry, and noodles. Heat through, stirring well to distribute sauce through the noodles.
Serve garnished with slices of green onion and omelet strips.
