FRUIT SALAD WITH STRAWBERRY DRESSING
FOR THE DRESSING:
1/2 cup sliced strawberries
1 tablespoon honey
1 tablespoon of raspberry vinegar
1/4 cup nonfat vanilla yogurt
1/2 teaspoon poppy seeds
FOR THE SALAD:
4 cups fresh spinach
2 peeled, sliced kiwi fruits
1 peeled, sliced mango
1 pint strawberries, sliced
2 peeled, sliced bananas
1 cup red grapes, halved
TO MAKE THE DRESSING:
Place strawberries in a blender, and puree until smooth. Add honey, vinegar, yogurt and poppy seeds. Blend for a few seconds until well-combined. Refrigerate dressing until ready to serve.
TO MAKE INDIVIDUAL SALADS:
Line 8 salad plates with spinach. Top with kiwi, mango, strawberries, bananas and grapes. Drizzle 1 tablespoon dressing over each salad. Serve immediately.
OR, TO PREPARE ONE LARGE SALAD:
Gently combine all ingredients in a large salad bowl. Pour salad dressing over ingredients and gently toss to coat. Serve immediately.
Makes 8 servings
