Recipe: Pineapple Cheese Mold, Lemon and Lime Mold, Molded Pineapple Surprise
Salads - Fruit, GelatinPINEAPPLE CHEESE MOLD
1 (16 oz.) can crushed pineapple
1 (3 oz.) pkg. lime jello
1 (3 oz.) pkg. lemon jello
1/4 tsp. salt
1 cup cottage cheese
1 cup mayonnaise
1/2 cup nuts, chopped
Drain syrup from pineapple. Add water to syrup for 2 cups liquid. Heat until it boils. Add (dry) Jello and salt; mix. Refrigerate until slightly thickened.
Fold together cottage cheese, mayonnaise and nuts. Add to Jello after it is slightly thickened. Pour into mold. Refrigerate for several hours to set.
LEMON AND LIME MOLD (using evaporated milk)
1 (3 oz.) pkg. lime jello
1 (3 oz.) pkg. lemon jello
2/3 cup boiling water
1 (16 oz.) can crushed pineapple, drained
1 (8 oz.) carton cottage cheese (1 cup)
1/2 cup mayonnaise
1/2 cup evaporated milk
1/2 cup nuts, chopped
Mix (dry) Jello and 2/3 cup boiling water until dissolved. Refrigerate until slightly thickened.
Mix in the rest of the ingredients. Refrigerate until firm.
MOLDED PINEAPPLE SURPRISE (using whipped cream)
1 (3 oz.) pkg. lime Jello
1 (3 oz.) pkg. lemon Jello
1 (8 oz.) carton cottage cheese
1 (8 oz.) can crushed pineapple, drained
1 cup mayonnaise or salad dressing (like Miracle Whip)
1 cup whipped cream
1/2 cup chopped nuts of choice
Dissolve Jello in 2 cups boiling water and Refrigerate until slightly thickened.
Combine remaining ingredients and add to thickened Jello. Pour into mold or dish; refrigerate until set.
