Recipe: Marinated Shrimp and Vegetables (ReaLemon recipe, 1989)
Appetizers and SnacksMARINATED SHRIMP AND VEGETABLES
1 pound medium raw shrimp, peeled, leaving tails on, deveined and cooked
1 cup fresh cauliflowerets
4 ounces small whole fresh mushrooms
1 cup sliced zucchini
1 large red or green bell pepper, cut into squares
3/4 cup ReaLemon Lemon Juice from Concentrate
1 tablespoon chopped green onion
2 teaspoons sugar
1 teaspoon salt
1/4 to 1/2 teaspoon dill weed
5 drops hot pepper sauce
3/4 cup vegetable oil
Place vegetables and shrimp in shallow dish; set aside.
In small bowl or jar, combine remaining ingredients except oil; mix well. Add oil; mix well. Pour over vegetables and shrimp.
Cover; refrigerate several hours or overnight, stirring occasionally. Refrigerate leftovers.
Makes about 5 cups
