MEAT BALLS, MACARONI AND BROCCOLI
1 pound hamburger
1/4 teaspoon oregano
1/2 teaspoon salt
4 twists of pepper mill
pinch of thyme
1/4 cup olive oil, divided use
1 pound uncooked elbow macaroni
1 pound fresh broccoli
1/2 cup Parmesan Cheese, divided use
Mix the hamburger meat with the oregano, salt, pepper and thyme. form into meat balls about the size of gold balls. Saute until golden brown in 2 tablespoons of the olive oil.
Boil the elbow macaroni until it is tender. Rinse in tepid water and set aside.
Clean the broccoli under running water. Break apart the blossoms, and cut the stalks into 1/4 inch slices. Boil for 8 minutes in salted water. Drain.
Put the remainder of the olive oil into a large baking dish. Swirl it around so that the bottom and sides are completely covered. Place the macaroni in the bottom of the baking dish. Add the meat balls, and sprinkle with half of the cheese. Put the broccoli over this and sprinkle the remainder of the cheese over the top.
Bake at 350 degree F oven for 20 minutes. Serve piping hot.
