This dish can be made to support any number of hungry people, just add more ingredients as you go.
Uncle Walt's Meatloaf
To start, collect the following ingredients:
2 lbs hamburger
1/8 cup honey
1/3 of an onion, chopped
1/3 of a green pepper, chopped
1/3 of a red pepper, chopped
1/3 of a yellow pepper, chopped
1 package crushed saltine crackers
4 eggs (I use two eggs per pound of meat)
1/8 cup brown sugar
1/2 tsp celery seed or to taste (or 3 stalks celery, chopped)
1 tbsp crushed red pepper
1/2 tsp chili powder
salt and pepper to taste
1/2 bay leaf crushed
Sauce:
3 cups mild spiced picante sauce (crunchy)
1/4 cup crushed pineapples
Preheat oven to 350 degrees Fahrenheit.
Mix ingredients in a large bowl. Pack the meat into a 9x5-inch loaf pan--TIGHTLY. The better a meatloaf is packed tightly, the better it cooks and slices.
Bake loaf for one hour or until done. Pour sauce onto meatloaf 10 minutes before it is ready to leave the oven or if desired, sauce can be served on the side.
While loaf is baking, combine sauce ingredients and set aside.
Serve hot and enjoy. Makes great sandwiches too!
