Recipe: Meatloaf Minis (using stuffing mix)

MEATLOAF MINIS

1 (6 ounce) package Stove Top Stuffing Mix
1 cup water
1 pound lean ground beef
3/4 cup shredded cheddar cheese
3/4 cup barbecue sauce

Preheat oven to 375 degrees F.

Mix stuffing mix and water together; mix with meat. Press into 12 regular muffin cups that have been sprayed with cooking spray.

Make an indentation in center of each; fill each meat cup with one tablespoon of the barbecue sauce.

Bake for 30 minutes or until cooked through (160 degrees). Top with cheese, continue baking for five minutes more or until cheese is melted.

Makes 6 servings
