Recipe(tried): KYJoe's Alternative Meatloaf

KYJOE'S WORLD FAMOUS MEATLOAF #2

This meatloaf is so good it will make your face fall off. Makes the best cold meatloaf sandwiches anywhere.

3 pounds ground chuck steak
2 cups chopped bell peppers
1 cup fine chopped celery
1 cup fine chopped onion
1 cup Heinz tomato catsup
1 cup plain croutons
1 cup brown sugar
2 eggs
3 tbsp olive oil
1 tablespoon sea salt
1/2 teaspoon black pepper
chili sauce (for topping)
Mashed Potatoes (for serving, recipe follows)

Mix all together. Form and place in large meatloaf pan.

Bake in 375 degree F oven for 1 hour 15 minutes or 165 degrees F internal temperature when tested with thermometer. Let set overnight in refrigerator.

Top with sweet chili sauce. Serve with mashed potatoes.

MASHED POTATOES:
Peel about 6 medium to large firm potatoes. Place in a pot of water to cover and boil until soft when poked with a fork. Drain, then mix in same pot you cooked in. Make mashed potatoes with 1/2 stick of real butter whipped with 1/2 cup evaporated milk. Really whip those taters with an electric mixer.
