Recipe(tried): Cart De Frisco Chicken Sandwich

OK, I used to work at Cart De Frisco and I made the sandwiches on a daily basis. Before this gets spread all over the internet I worked there close to 20 years ago and this from (hippy) memory NOT EXACT!

Chicken thighs marinated overnight in dark soy sauce.
skewer them the next day.
cook them over a gas or charcoal grill until done.
On a toasted onion Kyser bun put on the de-skewered chicken
Apply hoison sauce, pile high shredded cabbage/carrot mix.
then put on sweet hot chili paste and last but not the least hot chili sauce (Sriracha)
Close the sandwich and enjoy. There was a myth that we added opium to get you addicted. That only depends if we were sharing that day.
