Recipe: The Hermit Cake (tube cake using dates and walnuts) (Dixie Crystals package)

THE HERMIT CAKE

1 pound butter or margarine, softened
6 eggs
1 pound Dixie Crystals brown sugar
1 teaspoon ground cinnamon
4 cups flour
4 cups English walnuts, broken up
3 packages (8-ounces) chopped dates (Dromedary dates come chopped and sugared)
3 tablespoons lemon juice
1 teaspoon vanilla
1 teaspoon salt

Preheat oven to 300 degrees F. Grease a 10-inch tube pan and line bottom with waxed paper or parchment paper.

Cream butter, add sugar and cream well. Add eggs, beaten, one at the time. Add flour, cinnamon, salt, lemon juice and vanilla. Add dates and nuts. Pour into prepared pan.

Bake at 300 degrees F for 2 1/2 hours. Cool on rack in pan.

Makes 8 servings
