Recipe: Lettuce with Hot Bacon Dressing (1982)

LETTUCE WITH HOT BACON DRESSING

8 cups firmly packed lettuce leaves
4 slices bacon, diced
1 small onion, minced
1/4 cup cider vinegar
1 1/2 teaspoons sugar
3/4 teaspoon salt
1/4 teaspoon dry mustard
1/8 teaspoon pepper
1 egg

Into large salad bowl, tear lettuce into bite-sized pieces; set aside.

In 2-quart saucepan over medium-low heat, cook bacon until browned. With slotted spoon, remove bacon to paper towels to drain.

In bacon drippings remaining in saucepan over medium heat, cook onion until tender, stirring occasionally; stir in vinegar, sugar, salt, mustard, and pepper.

In small bowl with fork, beat egg slightly. Into egg, stir small amount of hot onion mixture; slowly pour egg mixture back into remaining onion mixture, stirring rapidly to prevent lumping. Cook, stirring constantly, until mixture is slightly thickened (do not boil).

Pour dressing mixture over lettuce; add bacon; toss gently to coat lettuce well. Serve immediately.

Makes 8 accompaniment servings
