Recipe(tried): Mini Banana Nut Muffins (wheat free) re: Hypoglycemic Snacks
Breads - Muffins, Quick BreadsI make Mini Banana Muffins (in a mini muffin pan) and freeze them (makes 24) then pop a few at a time in the microwave to thaw - put a couple in a ziplock bag and send w/ my son (who suffers from hypoglycemia) he loves them and they are a great snack to help him stay even:-)
The the best thing is this recipes calls for only a small amount of honey, no wheat, no yeast.
I like to shop at Earth Fare for my organic foods but any whole foods store should carry the ingredients.
MINI BANANA MUFFINS
1/2 cup organic quinoa flour
1/2 cup organic quinoa flakes
2 Teaspoons baking powder
1 teaspoon baking soda
2 to 3 ripe bananas
2 eggs
1 1/2 Tablespoons honey
1/4 cup organic walnuts or pecans (chopped in large pieces)
Optional: Small handful raisins (only if tolerated by hypoglycemic)
Preheat oven to 400 degrees F. Grease 24 mini muffin pan cups.
Mix all dry ingredients, except walnuts (or) pecans.
Mix banana, eggs and honey in separate bowl. Combine both mixtures; mix. Then add walnuts (or) pecans and raisins (if using). Fill prepared pans 1/2 full with mixture.
Bake in 400 degree oven for 10-15 minutes. Test for doneness by inserting toothpick. If it comes out clean, muffins are done. If not quite done, shut oven off and leave in oven for a few more minutes.
