WALDORF SALAD MUFFINS
2 cups flour
3 tsp baking powder
1/2 tsp salt
1/3 cup sugar
1/3 cup chopped walnuts
1 egg
3/4 cup milk
1/3 cup mayonnaise
1 tsp vanilla extract
1 medium apple, pared and finely chopped
2 tbsp celery, finely chopped
In a large bowl stir together the flour, baking powder and salt; stir in sugar and walnuts.
In a small bowl beat egg until foamy. Add milk, mayonnaise and vanilla; beat until blended. Stir in apple and celery. Add to flour mixture and stir just until moistened. Spoon into greased muffin cups.
Bake at 400 degrees F 20 to 25 minutes or until golden brown.
