Beer-Barrel Lima Beans

Amount Measure Ingredient -- Preparation Method

12 ounces shelled baby lima beans or
frozen baby lima beans
1 tablespoon butter or margarine
1 small poblano peppers -- seeded and chopped
1/4 cup dark beer
1 small red onion, quartered and sliced -- (about 1/4 cup)
1 teaspoon snipped fresh thyme or 1/4 tsp dried
1/8 teaspoon salt

In a 2 qt saucepan cook fresh beans, covered, in a small amout of water for 10-15 min. (Or, cook frozen beans for 6-8 min or until beans are just tender.) Drain.
In a large skillet heat butter; add beans and pepper. Cook and stir, uncovered, over med-high heat for 2 min. Stir in beer, onion, thyme, and salt; remove from heat.

Lima Bean Casserole

2 cups water
4 cups fresh, shelled baby lima beans or
2(10oz) pkg frozen
4 slices bacon
2 tbl flour
3 tbl brown sugar
1 1/2 tsp salt
1/4 tsp pepper
1 1/2 tbl dry mustard
1 1/2 tbl lemon juice
1/2 cup dry bread crumbs
2 tbl butter or margarine -- melted
1/2 cup (2oz) shredded cheddar cheese

Cook lima in water until tender, about 20 min; drain, reserving 1 cup liquid ( add water to make 1 cup if necessary). Place limas in a lightly greased 8" sq. baking dish; set aside. Cook bacon until crisp; remove bacon, reserving 2 tbl. drippings. Crumble bacon and set aside. Heat bacon drippings in skillet; add flour, stirring until smooth. Cook 1 min., stirring constantly. Gradually add reserved bean liquid; cook over med. heat stirring constantly, until mixture is thickened. Stir in brown sugar and next 4 ingred. Pour sauce over beans. Combine bread crumbs and butter; sprinkle over top. Bake at 350 for 25 min; sprinkle with cheese. Bake an additional 5 min. or until cheese melts. Sprinkle with bacon. - - - - - - - - - - - - - - - - - - -
