Recipe(tried): Baby Lima Beans with Italian Sausage

Here is one more lima bean recipe for you. I never really liked limas until I tried this one. I used frozen lima beans and hot Italian turkey sausage (to cut some of the fat).

Baby Lima Beans with Italian Sausage

1/2 lb. Italian bulk sausage, crumbled
1 onion, sliced
2 cups water
1 lb baby lima beans or broad beans
1/2 teaspoon ground cumin seed
1 fresh hot red pepper seeded and chopped
Salt
Freshly ground black pepperPlace the sausage and onion in a heavy casserole or saucepan and saute until light brown. Add the water and bring to the boil. Add the beans, cumin seed and hot pepper and bring back to the boil. Cover, reduce eat and simmer 20 mintes. Season well with salt and pepper.

Serve over cornbread. YUM!
