MUSHROOM AND SHRIMP ORZO SKILLET
"There's no need for constant stirring in this delightful version of risotto."
2 Tbsp. butter
1 lb. sliced mushrooms
1 cup white wine or chicken broth
1 cup water
8 ounces uncooked orzo pasta* (rosamarina) ( 1 1/2 cups)
1 ( 14 1/2 oz.) can Italian-styled diced tomatoes
1 (8 oz., 110 count) pkg. frozen salad shrimp
Melt butter in a 12-inch skillet until sizzling; add mushrooms. Cook over medium-high heat, stirring occasionally, until mushrooms are softened (2-3 minutes).
Add wine, water, orzo and tomatoes. Continue cooking until mixture comes to a boil (2-4 minutes). Reduce heat to low. Cover and cook until mixture is reduced (8-10 minutes).
Add frozen shrimp and stir. Continue cooking until heated through (3-4 minutes).
*Orzo is a tiny pasta that looks like rice. It can be found in the pasta section of large grocery stores.
