Okay I called her cuz what you describe reminded me of hers. This is a German potato Salad BUT she always says it more Swabish, and not what most people think of as "German Potato Salad"
Boil potatoes, peel and slice while warm
add fresh minced onions
Dress the above with a little oil and vinegar, brown spicy mustard, salt and pepper, and a bit of sugar.
Boil some beef bouillon (she said a cup or so)
While the Bullion is HOT, very Hot, pour it over everything stir gently, as the potatoes absorb the bullion add more HOT bullion.
To that add:
Sliced boiled Eggs (not authentic German but she adds them)
Polish sausage or kielbasa, chunked up if you have it
She lets it sit out a bit and watches the potatoes and adds more of the bullion so that it is all moist. She tastes and adds more vinegar if needed.
She didn't give ANY proportions except the bullion and says you might not use it all depending on the absorption.
Seems to me she does a 4-6 cup size Rubbermaid bowel with that cup. She made it once and it was not her best and she commented that her bullion was not hot enough if that helps
Good luck! Let me know if you try it and like it ~~ even if it wasn't exactly like what you are looking for it IS good!
