Recipe: New England Grilled Crab Cakes (contact grill/George Foreman Grill)

Butter-flavored cooking spray
9 oz. (drained weight) canned crabmeat
3/4 cup dried fine bread crumbs
1/2 cup onion
2 oz. jarred chopped pimento
1 egg or equivalent egg substitute
2 Tbsp. nonfat sour cream
1 tsp. dried parsley flakes
1/8 tsp. black pepper
Plug in and generously spray both sides of double-sided electric contact grill with butter-flavored cooking spray; heat 5 minutes.
Meanwhile, in large bowl, combine crabmeat (drained and flaked), bread crumbs, finely chopped onion and drained pimento. Add egg, sour cream, parsley flakes and black pepper. Mix well to combine. Using 1/4 cup measuring cup as guide, form into 8 cakes.
Evenly arrange crab cakes on prepared grill. Lightly spray top of cakes with butter-flavored cooking spray Close lid and grill 6-7 minutes or until crab cakes are golden brown.
Makes 4 servings
