Recipe: Jojos Santiago Skillet (using ground beef, brown rice and eggs, copycat recipe)

SIMILAR JOJOS SANTIAGO SKILLET

1/2 medium onion, finely chopped (about 1 cup)
3 tbsp extra virgin olive oil
8 oz lean ground chuck
1 (4 oz) can sliced mushrooms, drained
1 cup cooked brown rice
1 tbsp dried parsley
4 large eggs, well beaten
1/2 cup Dannon plain yogurt
1 tbsp all purpose flour
1/4 tsp Salt Sense
1/4 tsp ground black pepper

Saute onion in oil until soft. Add ground beef and cook until crumbly; drain any excess fat. Add mushrooms; cook 1 minute to blend.

Meanwhile, cook rice according to package directions.

Add cooked rice and parsley to to meat mixture in skillet; mix well.

In a small bowl, blend eggs, yogurt, flour, salt and pepper together; stir into meat mixture and simmer until eggs are set. Stir before serving and serve immediately.
