APPLE COBBLER
"A convenient, lowfat alternative to homemade apple pie, this old-fashioned recipe is quite fashionable today."
6 medium cooking apples, peeled and sliced (about 6 cups)
1/3 cup packed brown sugar
1 tablespoon lemon juice
2 teaspoons Argo or Kingsford's Corn Starch
1/2 teaspoon ground cinnamon
2 tablespoons Mazola Margarine
Biscuit Topping (recipe follows)
In large bowl combine apples, brown sugar, lemon juice, corn starch and cinnamon; toss to coat. Turn into 1 1/2-quart oblong baking dish. Dot with margarine.
Drop Biscuit Topping by heaping spoonfuls onto apple mixture.
Bake in 400 degrees F oven 30 to 35 minutes or until apples are tender and topping is golden. Serve warm.
BISCUIT TOPPING
1 cup flour
2 tablespoons sugar
1 1/2 teaspoons baking powder
1/8 teaspoon ground cinnamon
dash of salt
1/2 cup lowfat milk
3 tablespoons Mazola Corn Oil
In small bowl combine flour, sugar, baking powder, cinnamon and a dash of salt. Stir in milk and oil just until moistened.
Makes 8 servings
Each serving provides: 230 Calories, 2 g protein, 38 g carbohydrate, 9 g total fat, 4 g polyunsaturated fat, 1 g saturated fat, 0 mg cholesterol, 130 mg sodium.
