Recipe: No Bake Strawberry Shaped Cookies (repost)

NO BAKE STRAWBERRY COOKIES

1 (8 oz.) pkg. chopped dates
1/2 cup coconut
1/2 cup sugar
4 tablespoons butter
1 egg, slightly beaten
Dash salt
1 1/2 cups Rice Krispies
1/2 cup pecans
1 teaspoon vanilla
red sugar crystals (for decorating)
green icing (for decorating)

In a pan, combine dates, coconut, sugar, butter, egg, and salt. Cook and stir over medium heat until thick and bubbly.

Remove from heat and stir in Rice Krispies, pecans, and vanilla. Cool enough to be handled.

Using 1 tablespoon of mixture, shape like a strawberry. Roll in red sugar crystals. Decorate top with green icing for leaves and/or stem.

Makes 2-3 dozen
