CHOCOLATE-MARSHMALLOW BARS
3/4 cup (1 1/2 sticks) unsalted butter
1/2 cup sugar
2 eggs, beaten
1 teaspoon vanilla extract
2 1/2 cups finely crushed chocolate graham cracker crumbs
2 cups miniature marshmallows
1 cup semisweet chocolate chips
Grease a 9-by-9-inch baking pan.
In a large saucepan, melt butter.
Remove from heat and stir in sugar and eggs. Return saucepan to medium-low heat. Cook, stirring often but gently, until thickened, 8 to 10 minutes.
Remove from heat and stir in vanilla. Stir in graham cracker crumbs and marshmallows. Spread mixture evenly in pan. Chill until firm, about 1 hour.
In a small saucepan over very low heat, melt chocolate chips, stirring until smooth. Spread evenly over chilled layer in pan. Chill again until firm.
Run a sharp knife around edge of pan, then cut into
