Recipe(tried): Vegetarian P.F. Changs Lettuce Wraps

If you want to substitute tofu for chicken in the recipe above I just made it the following way and it was great.

Use 1 to 1 1/2 blocks of extra firm tofu and cook it in a skillet with olive oil for about twenty to thirty minutes uncovered (let the water cook out). During this time I had doubled to sauce recipe and added half to the tofu (it needs to be flavored more than chicken). Proceeded to add all the other ingredients as directed. I did use regular button mushrooms instead of the dried ones and let those cook down with the tofu. In the end add all the ingredients and the rest of the sauce. Heat through and yum yum!

I also made up my own sauce to pour over the wraps if you would like to try it.
3 TBSP low sodium soy sauce.
3 TBSP low sodium vegetable broth.
1 TBSP Dijon mustard.
1-2 tsp wasabi paste.
1 tsp sesame oil.
if I had a lime I would have thrown a little of that in there too for some kick!
