Recipe: No Bake Strawberry Cookies

Katie's recipe looks yummy. I ran across this version that has Rice Krispies in it.

No Bake Strawberry Cookies

Combine in pan:
1 (8 oz.) pkg. chopped dates
1/2 cup coconut
1/2 cup sugar
4 tablespoons butter
1 egg, slightly beaten
Dash salt

Cook and stir over medium heat until thick and bubbly.
Remove from heat and stir in:
1 1/2 cups Rice Krispies
1/2 cup pecans
1 teaspoon vanilla

Cool enough to be handled. Using 1 tablespoon of mixture, shape like a strawberry. Roll in red sugar crystals. Decorate top with green icing for leaves and/or stem.

Makes 2-3 dozen
