Recipe: Old Fashioned Bread Pudding

Here's three - take your pick.

BREAD PUDDING
INGREDIENTS:
20 oz Can Pineapple Chunks in Heavy Syrup, drained - reserve liquid.
4 Lg Eggs, beaten.
1/2 Cup Sugar.
1 tsp Vanilla Extract.
1/4 tsp ea Cinnamon & Nutmeg.
2 Cups 2% Low Fat Milk.
4 Cups Stale French Bread, cut into 1 inch cubes with crusts removed. 1/2 Cup Raisins.

INSTRUCTIONS:
Pre-Heat Oven to 350
In a large bowl combine the eggs, sugar, 1/4 cup of the pineapple liquid, vanilla, cinnamon and nutmeg, mixing well.
Meanwhile heat the milk to almost boiling.
Stir the milk into the egg mixture.
Stir in the bread, pineapple and raisins.
Let set for 15 minutes to soak up juices.
Pour into a greased 2 1/2 Qt casserole dish.
Bake at 350 for 1 hour and the top is golden brown.
Bake until knife comes out clean when inserted at the center.
Let it rest for 10 minutes after removing from oven to SET.

BREAD & BUTTER PUDDING
INGREDIENTS:
8 Tbs butter, softened
12 slices white bread without crusts
1/2 cup golden raisins
1/8 tsp cinnamon
5 lg eggs
3 cups milk
1 cup heavy cream
1/4 cup sugar
pinch of nutmeg

INSTRUCTIONS:
Pre-heat oven to 350
Coat bottom of baking dish with butter.
Butter both sides of bread slices and lay 4 slices in bottom of baking dish side by side.
Toss raisins and cinnamon together and scatter over bread.
Add second layer of bread, remainder of fruit and top with remaining bread.
Whisk the remaining ingredients together and pour over the bread.
Let sit at room temperature at least 30 minutes.
Cover with foil and bake at 350 degrees for 30 minutes.
Uncover and bake another 30 minutes and uthe top is golden brown.

NEW ENGLAND BREAD PUDDING
INGREDIENTS:
3-1/2 cups milk
1/4 cup butter
2 cups dry bread cubes, crusts removed (French bread is best)
1/2 cup sugar
2 lg eggs, slightly beaten
1/2 cup sherry or brandy
1 tsp ea cinnamon and nutmeg
1 cup raisins

INSTRUCTIONS:
Bring the milk to just under a boil then add the butter and let it melt.
Pour the milk butte mixture over bread cubes
Let the milk soak in for 5 minutes.
Add all remaining ingredients and mix well.
Pour into buttered baking dish and set in pan of hot water.
Bake at 375 about 1 hour, or until knife inserted in center comes out clean.
