Recipe: Olive Garden Bolognese Tomato Sauce

Good Morning. This recipe is not a copycat. It is an authentic recipe from executive CHEF G. GIABATTINI from the olive garden.

OLIVE-GARDEN'S BOLOGNESE TOMATO SAUCE

2 Tbsp olive oil
1 onion, finely chopped
1 carrot, finely chopped
1 celery stick, finely chopped
2 garlic cloves, finely chopped
8 oz ground beef
6 oz Italian sausage (skinned)
1 cup red wine
18 oz chopped tomatoes, crushed
salt & pepper to taste (add at the very end of cooking)
1 tsp chopped rosemary.
1 tsp chopped sage
12 oz dry fettuccine

Heat oil in a large pan. Add the next 4 ingredients & cook about 5 minutes.

Add the meat, cook 10 minutes over medium heat, stirring occasionaly.

De-glaze pan with wine & let reduce.

Add tomatoes & remaining ingredients, simmer slowly about 1 hour. Cook pasta drain, toss, with sauce.
