MOM'S CINNAMON APPLE RAISIN BREAD
2 eggs
1 cup granulated sugar
1/2 cup cooking oil
1 teaspoon vanilla
11/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/8 teaspoon salt
2 teaspoons cinnamon
1 cup peeled, chopped apples
1/2 cup diced raisins or chopped dates
1/2 to 3/4 cup chopped walnuts
Preheat oven to 350 degrees F. Grease and flour a 9x5-inch loaf pan.
In a bowl, combine eggs, sugar, oil and vanilla; beat until creamy.
Sift together dry ingredients and fold into creamed mixture until all is moist. Fold in apples, raisins and walnuts. Pour into prepared loaf pan.
Bake at 350 degrees for 1 hour or until toothpick inserted in center comes out clean.

2 medium apples, peeled and chopped
1 tablespoon water
1 3/4 cups flour
1 1/2 cups sugar
1/2 cup applesauce
1/2 cup raisins
2 eggs
1/4 cup vegetable oil
1 teaspoon ground cinnamon
3/4 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon vanilla
Preheat oven to 350 degrees F. Grease a loaf pan.
Take peeled and chopped apples and place them in a microwave safe bowl. Add 1 tablespoon water to the apples and microwave for 1 to 1 1/2 minutes.
Combine apples and all remaining ingredients and mix thoroughly. Pour mixture into a greased loaf pan.
Bake for 1 hour to 1 hour 15 minutes. When done let sit for 15 minutes before removing from pan and placing on a wire rack.
