OLIVE GARDEN'S AUTHENTIC SHRIMP SCAMPI
2 tbsp olive oil
1 medium onion, chopped
3 cloves garlic, crushed
1 1/2 pounds fresh medium shrimp, shelled
4 oz butter
1/2 cup white wine
3 tbsp parsley, finely chopped
1/3 tsp. crushed red pepper
Salt and pepper to taste
10 oz angel hair pasta
Heat oil in a saute pan, add onion, saute 2 minutes.
Add garlic saute 1 minute.
Add shrimp, cook 1 to 2 minutes
Add Butter, wine, parsley, red pepper, and salt and pepper to taste.
Cook pasta in rapidly boiling salted water and drain.
Place pasta in plate and serve shrimp concoction over the pasta.
