MICROWAVE BROCCOLI LASAGNA
1/2 lb. ground turkey (optional)
1 (16 ounce) jar spaghetti sauce, divided use
1/4 tsp. garlic powder
1 (10 ounce) pkg frozen broccoli, chopped
3/4 cups low fat or fat free ricotta cheese
1 egg white
5 ounces lasagna noodles (1/2 of regular package)
5 ounces sliced or shredded low fat mozzarella cheese
1 tbsp. parmesan cheese
Crumble raw turkey into a microwave safe bowl. Stir in 1/2 of spaghetti sauce. Stirring midway through cooking, microwave on high 2-3 minutes. Stir again and add remaining spaghetti sauce and garlic powder; set aside.
Defrost frozen broccoli according to package directions. Combine broccoli with spaghetti sauce/meat mixture, mixing well; set aside.
Separately, combine ricotta cheese and egg white and mix until blended; set aside.
Layer 1/3 sauce mix, 1/2 noodles, 1/2 ricotta cheese mixtures and 1/2 mozzarella cheese in a 9-inch square microwavable baking dish. Repeat layers ending with the remaining 1/3 sauce mix. Sprinkle with Parmesan cheese. Cover with wax paper.
Microwave on high for 5 minutes, rotating dish once. Continue cooking on medium for 13-15 minutes. Let stand for 5-8 minutes before serving.
Serve with a salad.
Hint: Add more vegetables to the sauce mix or replace the turkey with extra vegetables to increase fiber and vitamin consumption.
