Recipe(tried): Onion and garlic jam?

I have been working on trying to duplicate roasted garlic and onion jam. I am close but not quite there yet. So far, I have slowly sauted chopped onions in a very small amount of olive oil add finely chopped roasted garlic, basalmic vinegar and pepper. To this I added lower sugar pectin and sugar following the instructions on the package. I put it in the 4 oz jars with lids and screw rings and boiling water processing. My first attempts did not jel. I added more pectin and sugar and got a good jel,but it did not have enough garlic flavor.I will continue to work on it next time I get a chance and I will share it with you all.
