ORANGE COFFEE RING
1 1/2 cups sifted all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/4 cup shortening
3/4 cup sugar
1 egg
1/4 cup milk
1/4 cup orange juice
Confectioners' sugar icing
Shredded orange rind
Sift together flour, baking powder, and salt; set aside.
Cream together shortening and sugar until light and fluffy. Add egg; beat well. Stir in milk. Gradually add orange juice. Add flour mixture to creamed mixture, stirring only until blended.
Bake in a greased 9-inch ring mold in a moderately hot oven (400 degrees F) about 25 minutes. Unmold and cool.
Spread with confectioner's sugar icing, and sprinkle with shredded orange rind.
Makes 1 cake
