Recipe: Orange Meringue Pie

Misc.

Hi John;
Here's a recipe I found awhile back, hope it's what you are looking for.
Orange Meringue Pie
3/4 c sugar
1/4 c cornstarch
1/4 tsp salt
1 1/2 tsp finely shredded orange peel
2 c orange juice, or reconstituted frozen
3 slightly beaten egg yolks
2 T margarine
3 egg whites
1/2 tsp vanilla
1/4 tsp cream of tartar
1/3 c sugar
baked pie shell
--------------------------------------------------------------------------------

In saucepan combine 3/4 c sugar, cornstarch, and salt. Gradually stir in the juice
Cook and stir over over medium high heat till thickened and bubbly
Reduce heat; cook and stir 2 mins longer. Remove from heat.
Slowly stir about 1 c hot mixture into beaten yolks. Immediately return mixture to saucepan
Cook 2 mins more, stirring
Remove from heat; add margarine and orange peel
Turn hot filling into baked pastry shell
For meringue, beat egg whites, vanilla and cream of tartar with electric beater till soft peaks form
Spread over hot orange filling; seal to edge
Bake 350 12-15 mins or till meringue is golden
Cool before serving
