Recipe: Cutting Board's Chess Bars (Cutting Board Restaurant, Louisville)

FOR THE CRUST:
1 box yellow cake mix
1/4 pound (1 stick) butter or margarine, softened
FOR THE FILLING:
1/2 pound cream cheese (softened)
1 pound powdered sugar
3 eggs
TO MAKE THE CRUST:
In a bowl, combine cake mix and margarine, working into a coarse, mealy texture. (I did this twice, once with a pastry cutter and once with a stand mixer. Both methods worked well.) Using your hands, knead the mixture until it begins to come together into a clump. Press the dough into a 9-by-9-inch greased baking pan.
TO MAKE FILLING:
Beat cream cheese in a mixer until smooth. Slowly add powdered sugar, beating well after each addition. Add eggs 1 at a time. Pour batter over the crust.
Bake in a 350-degree F oven for 35 to 45 minutes, until the top is golden and puffed and tests clean with a toothpick. Top will fall as it cools.
Makes 12 bars
