Recipe: Orange Sesame Pork Chops and Apple Slaw

ORANGE SESAME PORK CHOPS AND APPLE SLAW

4 pork chops, each 3/4 of an inch thick
FOR THE SLAW:
1/2 cup bottled coleslaw dressing
2 teaspoons apple cider vinegar
1/4 teaspoon celery seed
1 pound packaged coleslaw mix (or 6 to 7 cups shredded cabbage and carrot mixture)
1 large apple, stemmed, cored and diced
FOR THE ORANGE-SESAME SAUCE:
1/3 cup orange marmalade
2 tablespoons soy sauce
1 tablespoon rice vinegar
1/4 teaspoon sesame oil
2 teaspoons vegetable oil

TO MAKE SLAW:
Mix together dressing, cider vinegar and celery seed.

In large bowl, stir together shredded cabbage and diced apple. Pour dressing over all and toss to combine. Cover and refrigerate until ready to serve.

TO MAKE THE ORANGE-SESAME SAUCE:
In small saucepan or microwave-safe container, combine marmalade, soy sauce, rice vinegar and sesame oil and heat over medium heat, stirring until smooth, or microwave at high for 35 to 45 seconds until smooth. Set aside.

TO PREPARE THE PORK CHOPS:
Heat oil in 12-inch, non-stick skillet over medium-high heat. Add pork chops and brown for several minutes on both sides. Reduce heat to low, pour orange-sesame sauce over chops, cover, and simmer 6 to 8 minutes.

TO SERVE:
Serve chops with slaw on side.

Makes 4 servings
