PORK STEW IN SAUERKRAUT
1 large onion, chopped fine
2 tbsp. oil or lard
1 heaping teaspoon Hungarian paprika
24 ounces of pork, cut in 5/8-inch cubes
1 quart water
1 quart sauerkraut, rinsed in clear water 1 time and drained
3 Tbsp flour
1/2 cup cold water
Salt (to taste)
Saute onion in fat. Remove from heat and quickly stir in paprika and diced pork; mix well. Add the 1 quart of water, cover the pan and simmer until half cooked for 30 minutes.
Stir in the sauerkraut add a little water to cover. Simmer, covered, until meat is tender.
Stir the flour into 1/2 cup cold water until smooth, add to the meat and sauerkraut mix well; bring back to a boil until thickened. Add salt to taste.
Serve with boiled potatoes and crisp bread.
