Haven't tried this yet, but with my addiction to bananas, I will, very soon!
OVEN BAKED BANANA FRITTERS
Adapted from source: Teresa Cutter, The Healthy Chef
Servings: 6
1 cup wholemeal bread crumbs or ground almonds or other nuts
1/2 cup desiccated coconut
2 tablespoons raw sugar or sugar substitute
1 teaspoon cinnamon
6 bananas, peeled
1 egg white, beaten
vegetable oil cooking spray
Preheat oven to 350 degrees F (180C). Line a baking sheet with foil or parchment paper.
Combine bread crumbs or ground nuts with the coconut, sugar, and cinnamon.
Brush bananas with egg white and coat with crumb mixture. Place on lined baking sheets and spray with vegetable oil.
Bake for 10 minutes until golden brown.
