QUICKEST CHICKEN CACCIATORE
4 boneless skinless chicken thighs
2 tablespoons butter or margarine
1 (14 ounce) jar chunky-style meatless spaghetti sauce
1 (2 1/2 ounce) jar sliced mushrooms, drained
1/2 cup chopped green bell pepper
1/4 cup dry red wine
1 (9 ounce) package refrigerated fettuccine, cooked and drained
Cut each thigh lengthwise into 3 pieces.
Melt butter in large skillet over medium heat. Add chicken; cook 8-10 minutes or until no longer pink in center.
Add remaining ingredients except fettuccine. Cook and stir until heated through. Serve over fettuccine.
Makes 4 servings
