Recipe(tried): Oven Roasted Rutabagas, Shallots, Garlic and Potatoes

my daughter is just taking this out of the oven, and it is smelling heavenly!!!

OVEN-ROASTED RUTABAGAS, SHALLOTS, GARLIC & POTATOES
(You can substitute any root vegetables. We are doing rutabaga, parsnips and garlic)

1 lb. rutabagas
1 lb. yellow or red potatoes
12 shallots, peeled
1/2 cup unsalted butter
1 tsp.. olive oil
12 cloved garlic, peeled
2 bay leaves
8 to 10 sprigs fresh thyme
4 sprigs parsley, finely chopped
Coarse sea salt or kosher salt
Freshly ground pepper

Peel vegetables and cut into approximately same size chunks
Melt butter in roasting pan large enough to hold vegetables in a single layer. Toss veggies in the butter-oil, add seasonings and mix or toss well.
Roast in pre-heated 5550 degree oven 30 to 40 minutes until cooked through and nicely browned. Stir and turn from time to time while roasting and baste with pan juices every 10 minutes. Adjust seasonings to your own taste. Makes 4 servings.
