Recipe(tried): Party Menu for a Family Birthday

So, the twins are turning one and we are planning to have a family dinner with about 40 family members to celebrate in style. Here is the Menu:

Smoked Venison Hindquarter
Baked Ham
Smoked Wild Turkey
Broccoli Salad (recipe posted above in Cooking Club section)
Macaroni and Cheese
Cooked spiced Apples
Butterbeans
Black Eyed Peas
Potato Salad (from Finney's Restaurant)
Baked Beans
Fresh Fruit Plate

I use a rub for both the Turkey and the Deer made from emeril's Bam and cracked pepper and smashed garlic cloves. I rub the meats well, then smoke them overnight over sticks of hickory, I like about three good sized sticks.

Ham: Place ham in a large baking roaster and sprinkle with brown sugar. Dot with 3 T butter and pour the juice from one large can of pineapple chunks over it all. Cook basting occasionally as package states per pound.

Fresh Fruit Plate:
Take those chunks of pineapple or cut a fresh pineapple into chunks and place on a decorative tray. Wash red and green grapes and place on tray. Wash and cap strawberries and place on tray, sprinkle with splenda if not sweet enough. Peel clementines and place slices on tray. Use any other fruits that are good for the season and serve with or without dip. (We are serving without)

Macaroni and Cheese:
Take 3 Cups mixed Cheese such as Cheddar, Vallegret, white cheddar, Edam, Colby Jack, etc and mix with 1 large block of velveeta that has been cubed. Place in a large pot over medium heat. Add to this 1 1/2 C milk shaken with 1/2 C flour and 3 T butter. Add salt and pepper to taste. Boil macaroni noodles, or small shell pasta until just al dente'. Drain pasta and mix into cheeses. Pour into a large baking dish and bake at 350 20 minutes or until center is bubbly and edges are lightly browned.

Baked Beans:
Take 4 Cans pork and beans and mix with 1 jar real bacon bits. Add 1 small chopped onion and 1/2 of a small chopped bell pepper. Add 1/2 C brown sugar and 1/4 C vinegar. Mix all and bake at 350 for 1-1/2 hours or until most of the liquid has been absorbed.

Cooked Spiced Apples:
Take 5 pounds of apples and peel, core and slice them into wedges. I get 6-8 wedges out of each apple. Place in a large stew pot and add water just to cover. Add 3 T butter, or margarine, and 1 C brown sugar. Add 1 T cinnamon and 1/4 each teaspoons nutmeg and allspice. Bring to a boil then reduce heat and cook until apples are just fork tender. Remove from heat and they will soften a bit more. If you over cook them you can use them to make homeade spiced applesauce. You can also cook these with the peels left on the apples.

Butterbeans are just frozen ones that I add a couple of tablespoons of margarine and salt and pepper to. For the Black eyed peas, I add a T bacon drippings and cook till tender. Then I add salt to taste.

We are serving Sister Schubert's rolls and there will be soft drinks and tea to go around for everyone!

I am making two very special cakes for them (as this is what I do for a living) and will try to post the pctures and directions for you next week!
