Recipe(tried): Patricia - leftover roast beef

2 recipes I use for a quick meal with leftover beef.
Slice an onion or 2 in rings or quarters - red peppers green peppers yellow peppers in strips
Heat cast iron fry pan with a little oil til very hot and add veggies cooking til tender crisp. Add beef at last minute stirring till warmed through.
Shred lettuce, grate some cheese, chop some tomatoes and olives, jalapeno peppers, avacado, salsa , sourcream. Place on the table in bowls. Warm flour tortillas (the soft ones in the micro wave for 1 minute covered)
Place a trivet on the table and place the piping hot pan on it. Have everyone built their own taco.
We find that folding the tortilla shell once in half and then in half again to a cone shape works best.
